What came was a fine dish with lots of balance. Crispy sweet potatoes with melty insides (achieved by a confit on the potatoes and then frying them just before serving) on a bed of yogurt and adorned with Raja Ulam. Scrumptious! Thanks Chef @garyanwar for sending this over!
