To prepare this dish, cooked rice grains is submerged in a stock and selected ingredient such as sliced fish, fried fish, clams and even lobsters are added. Depending on what seafood is added, the resulting pao fan will taste slightly different from each bowl but the difference maker has got to be the stock. At the self-proclaimed King of Pao Fan, the stock has an orange hue and fried egg is included in each bowl, which the flavours can get too rich if you order the fried fish option. My recommendation is to get the mixed fish or clams which will add a certain sweetness to the broth. Nonetheless, pao fan is a comforting and easy-to-eat rice dish that will be popular with many for some time.
