When the Head Chef approaches, bearing a jaw-droppingly gorgeous dessert of this calibre, it is imperative to nod and say "Yes please", no matter how stuffed you feel. Failure to do so will only lead to regret because the "Sicilian Pistachio Parfait" is supremely gratifying in every way.
Yes, it is visually very pleasing but let me just say, this is a dessert created for much more than Instagram worthiness. Your tastebuds are the true lucky ones.
That green ring is an intensely fragrant (if I could underline and bold those words, I would) pistachio ice-cream covered in a thin layer of crisp caramelised white chocolate. Upon serving, a sauce made of berries is poured into the hole in the middle. That sauce, along with the lime sorbet and fruit components are part of what makes this masterpiece such a pleasure to indulge in.
