Pork Belly, served on a bed of classic French lentil cassoulet (Stew lentil, bacon, mushroom, cabbage, poached egg)

Unfortunately, this wasn’t as satisfying as their signature duck confit (refer to the previous post). The thick yet tender slices of pork belly fell short of having a perfectly crispy skin. The bed of stew was kinda one-dimensional too, despite stewing different ingredients in it and topping off with a seemingly random sous-vide egg.
