This was one dish that stood out the most for me during lunch the other day. Everyone makes pork curry, but not much places make their curry like New Ubin. Pork is cured and smoked, before added to the curry, along with mixed vegetables to cook, widening its umami-smoky savory flavor base. Break the eggs and mix them up to emulsify the oil with the curry, to enhance the richness and more cohesive. Just go ahead and get a bowl of rice to pair with that delicious curry!
