I loved the gravy in Indigo Blue Kitchen’s rendition of this Peranakan classic because it’s heavy on spices and assam, and thickened nicely with the black nut paste. My fellow diner Audrey found her piece of chicken a bit dry but mine was perfectly fine. The nuts were packed to the brim and we were given teaspoons to dig out every bit of the goodness.
