It's not easy to find a rendition of a classic dish that completely blows others out of the water but this is one instance. Chef Sebastien Lepinoy and Cheryl Koh serve what I think is the best Baba cake on 🌍. Yes, it's even better than the famous dishes served by Alain Ducasse and Joel Robuchon. The Baba cake at Les Amis is ethereally light and the slightly sweet, slightly tart apricot glaze gives it a beautiful shine and an amazing depth of flavour. The vanilla cream is thick, rich and generously flavoured with vanilla beans, complementing the light cake. Finally, a delicious aged rum from Martinique blended from a mix of vintages no younger than 10 years old is deep, complex and perfect for this dish
