On the first cut, we raised our eyebrows because it took us quite an effort to cut. My dining partner even expressed his initial doubt only to be proven wrong upon chewing it. The octopus was well executed with such a perfect tenderness (not too soft either, which I personally detest). It retained the juiciness and smokiness as it was steamed before being grilled. Another shout out would be for the burnt onion slice that was so unbelievably sweet, letting you forget the typical onion taste and smell for a while. It seems like the usual oyster leaf (in the menu) was replaced by pickled seaweed (as mentioned by the head chef upon serving it to us) but it was definitely as lovely. It possessed a sharp acidic flavour at first but with a mild balsamic aftertaste. Such a harmonious contrast in flavour which makes this my personal favourite of the night.
