Beef short rib is a dish where adjectives like tender are often thrown around. But how many of them are truly that immaculately tender?

My favourite from their July Chope special, their wagyu beef short rib was truly flawlessly tender. The supple fibres of the short rib split gracefully with little effort, and the gentle and soft textures of the protein danced in my mouth with the elegance of a dance troupe. Further complementing the tenderness was an immense juiciness and beefiness.

To make me swoon even harder, it was topped with a intricately complex and decadent red wine sauce, accompanied by onions which brought a sweetness with a tad of acidity. All the components built on to the meat's flavours with a harmonious coherence.

Perhaps one of the best beef dishes I've had.
