Having tried the original @blackstarpastry and a few other variations, theirs unfortunately fell short. We found the balance off with the refreshing and moist watermelon overpowering the thin crisp almond dacquoise (could be thicker & richer) and the light rose chantilly cream (wished for this to be more floral). Did enjoy the toppings of strawberry, grapes, blueberries that provided sweet-sour tartness. However, the thick watermelon slab and chunky fruits were too distinct such that it felt more like watermelon and fruits with cream rather than an integrated watermelon-strawberry cake. Also wished for the extra nuttiness and crunch from pistachios that the original version offers.
