Dinner starts with a one-biter of amaebi on a rice flower before moving on to a quadruple appetiser course of hyogo oyster, cured amberjack, poach shrimp with garam masala and tempura soft shell crab.

Noteworthy dishes include the squid noodles with salsa verde and grilled king scallop topped with a XO chilli jam that brings the umami and spice. The highlights of the dinner went to the grilled turbot with garlic brown butter and the richness is nicely balanced with the pickled papaya salad, and the abalone poached rice, which is cooked with their signature prawn bisque.
