In Japanese, “maze” means “to mix”, which is exactly how you should eat this! 😋 I had their bestseller (Nagoya style mazesoba), and it was really good! Dry ramen topped with a soft, oozing egg, spicy minced pork and loads and loads of spring onions! (A warning to those who detest spring onions: this is probably not the ramen for you) My dining partner had the karaage mazesoba, which we found equally good!
