The 3-course Normandy menu starts off with a Mussel & Cauliflower Velouté with a crunch from the herb croutons. The saffron cream will be served and poured tableside, and you can enjoy this comforting broth, packed with flavours before the main course. The Garlic-studded Rack of Lamb is served next, according to your preferred doneness, with artichokes, watercress and a mint jus. Perfectly executed with a charred crust on the outside while the inside meat remained juicy and not having a strong gamey aroma. The final course brings to you a Tarte Normande, a classic caramelized French apple tart with a side of vanilla ice cream. The shortcrust pastry forms the base and baked together with the creamy egg custard and crunchy apple wedges.
