If you can stomach something rich and gelatinous, this will be an indulgent treat. Australian oxtail is marinated and braised in aromatic herbs and spices, then grilled over charcoal. Lightly charred and crispy on the outside, each bite was full of smokiness, with bittersweet flavours. Thankfully, when it felt really rich, there was pickled chilli that cuts through the fat.
