Another must-try for fans of crustaceans, the Bucatini, Spanner Crab, Smoked Trout Roe ($32) was quite a fresh and fun number. My first time having bucatini so I was pleasantly surprised when I found the bright, savoury sauce hidden in the hollow centre as I bit into the lovely al dente pasta - locking and capturing the seafood flavours. The spanner crab meat was deliciously sweet and the briny pops of smoked trout roe were a “chef’s kiss”. Just a seemingly simple and well-executed dish.
