Cured Saba was pretty good, and very surprised by the crunchy clean texture of raw cauliflower. Who would have thought?

The stunner was the mint yoghurt sauce, always thought traditional yoghurt sauce was too tart, the addition of honey really rounded the sauce out and it's the best yoghurt sauce I've had. This dish truly highlights chef ace's skills of balancing flavours. The sweet Muscat grapes, the yoghurt sauce, the savoury fishy(not in a bad way) Saba, all doesn't seem to come tgt but they don't actually interfere with one another. Damn
