LRC's play on a Spanish favourite is tasty enough, but falls slightly short of the mark. There's nothing wrong with the individual elements, and theoretically they should work harmoniously together, but as a whole it fails to evoke the full-bodied flavours of Spanish cuisine and the balance as well as portion sizing of each piece of the puzzle is off, especially where the ratio of sourdough toast and crisps to chorizo sauce is concerned. In addition, potato "foam" is a misnomer, as its consistency is closer to a puree instead of the effervescent nuage I was expecting. I did enjoy the very well-executed bread-coated soft fried egg which was amazingly crisp on the outside yet gave way to soft, molten ooziness when cut into.
