Decided to try my hand at making a Korean Seafood Pancake as I was craving Korean food yesterday. Looked up a bunch of recipes and improvised for the rest. Added julienned carrots, sliced spring onion stalks, prawns and diced white onion. Flavour was good, although I would have liked it thinner and more crispy! :
Ingredients
1/2 cup plain flour
1/2 cup rice flour
1 cup water
Finely sliced veggies eg. onion, carrots, spring onions
Assorted seafood eg. prawns (can also use clams, scallops)
Finely minced garlic
2 tsp light soy sauce
1 tsp sesame oil

Steps
1. Mix plain flour, rice flour and water together. Add more water to get a runnier texture if you like your pancake more crispy. Add soy sauce and sesame oil. Stir well to mix.
2. Saute a pinch of minced garlic with the finely sliced veggies in some oil
3. Add some of the pancake batter (from step 1) over the veggies, being careful not too create too thick a pancake
4. Flip once nicely browned on one side
5. Serve and enjoy!
6. Repeat to make more pancakes.
