Brussel sprouts is not a vegetable that is widely accepted due to the acquired taste profile whereby you will either shun it totally or love it to bits. For me, I am neutral but am amazed at how well they did this dish here. The slightly charred and crunchy texture of the brussel sprouts paired harmoniously with the smoked bacon while the maple butter brings a good balance of sweet and savoury to all the elements, while further elevating the aroma.
