Set aside all the liquid pureness you desire now, before cooking your platters of organic vegetables and seafood changes the taste of your stock. In goes tori tsukune (chicken meatball) scraped off a wooden spatula, then yellow zucchini, watermelon radish, baby corn, lady’s finger, garnishing with yuzu. In drops your tray of leafy greens of sunflower sprouts, lettuce and baby sweet potato leaves with black fungus, enoki mushrooms and deep fried tofu. Now for the finishing zosui (rice porridge) we chose. White rice, she empties into bubbling fresh broth, stirring for a minute or two. Wonderful. Satiety is what this is.
