Spotting a routinely queue, Min Nan Pork Ribs Prawn Noodles 閩南排骨虾面 serves a pretty satisfying bowl of Pork Rib Prawn Noodle Dry ($4.50/$5.50). However, the soup on the side might be their weakest link. Due to the lack of robustness, the broth was very much of a milder variation that didn’t have the usual oomph and strong umami flavour of crustacean (but hey if a light prawn noodles soup is what you are looking for). The noodles, a mix of rice vermicelli and yellow noodles, on the other hand were cooked just right - firm, not soggy or undercooked. And add that with the fragrance of shallots and pork lard, the humble bowl certainly captured my heart. The pork ribs too, were well-executed - tender and meaty.
