Always love a good plate of barley risotto, so of course we couldn’t pass up trying this - picked it as one of our mains, along with a 4 cheese smoked salmon tagliatelle. Barley was done nicely plump and chewy in a creamy cheddar sauce, with mushrooms and balsamic tomatoes. Would probably be heavy for one to finish especially with it’s large portion, but great when shared.
