And this was amazing. You don't see any oyster in this dish here, and that's course it had been integrated into the flan that contained small chunks of lobsters and topped with caviar. This is like chawanmushi, yet it was unlike any other chawanmushi I've had.

Creamy umami kicked it at this 4th course of the 8 course dinner, which included:

* Tokutani Tomato with Strawberry, Almond and Umeshu
* Chutoro with Ponzu, Daikon and Kimchi
* Hamachi with Yellow Beet, Elderflower and Dill Oil
* Cadoret Oyster with Flan, Lobster and Caviar (pictured)
* Petit Pois with Morel, Manchego and Hokkaido Milk
* Yokeshire Jowl, Celeriac, Oba and Tea
* Miyazaki Beef with Mountain Yam, Myoga and Beef Jus
* Gariguette Strawberry with Rhubarb, Smoked Chocolate and Yuzu Kosho
