1 dish that never fails to make me happy is a good bowl of minced meat noodles and Fa Ji is one of those that I crave for.

Their $5.50 bowl comes generous with quite a few ingredients, but the stars of the show were really the noodles and their chilli sauce. The noodles were very springy and they were will coated with their chilli sauce, which is very much on the savoury side as compared to the usual vinegary tangy kind. The pork lard intensified the umami, and they were satisfyingly crispy!

Definitely will be back again. Lovely!

Several things stand out in their rendition.

The gravy, slick with pork lard, light soy sauce, black vinegar, and chili, coats the soft mee pok / wide flat egg noodles well, lending robust savoury salty spicy flavour.

The tender soy braised shiitake mushrooms, juicy and vegetal salty earthy savoury in taste.

The bouncy fish balls and springy fish cake have a light savoury sweet flavour with a hint of vegetal fishy notes, yum.

Bits of tender minced pork with meaty sweet savoury flavour, and crisp spring onions with vegetal herbal sweet notes, complete the dish.

Love the bak Chor mee ($4) here! I always order the kway Teow and 3 sauces (chilli, vinegar, ketchup) combi ๐Ÿœ

If there's an identity to the overall meh Kovan hawker centre, it's the bcm rivalry. I rarely join the queues but I know they're all quite good. Compared to bcm elsewhere, here they're generously seasoned. The portion of the noodles was also huge.

Noodles texture cooked just right, retaining it's springy texture for a good bite. Comes with a good portion of ingredientsย such as minced pork, liver, fishball, fish cake, meat ball and braised mushroom. Their sauce includes their fiery chili but carries a hint of sweetness and the amount of vinegar used is not too overpowering.
