The Rundown

Started by veteran bar consultant Julian Serna, who’s travelled extensively across the Americas, Panamericana is a tribute to his Colombian heritage, and his way of making the rich diversity of cuisines along the Pan-American Highway (it connects North, South and Central America) accessible and approachable for diners.

The Vibe

Taking over il Lido’s grounds in Sentosa Golf Club, this sprawling bar and grill is reminiscent of a grand but welcoming colonial house, complete with whitewashed walls, black and white Georgian tiles and large windows that let in plenty of natural light. Come by in the evening so you can enjoy a sundowner on the breezy terrace (the space overlooks Tanjong Beach). On a cool day, it’s lovely to enjoy a meal alfresco, but you can also choose to adjourn to the dining room, where a brick-encased grill cooking whole meats on a spit will definitely catch your eye.

What’s Good

Expect a “farm to fire” repertoire of succulent meats, fresh seafood and regional street food, all inspired by the rich diversity of cuisines along the Pan-American Highway, which connects North, South and Central America. The dishes are mostly served communal style, so it’s best to bring a large party to try them all!

The small plates blew us away right from the get-go, with really tasty options like the Empanadas ($8, harissa pulled lamb stuffed pastries) and a stellar snapper Ceviche ($16) tossed in a citrusy coconut marinade, enlivened with sweet papaya, onion and fresh coriander. The protein-forward main plates are cooked extremely well too, which justifies the heftier price tags. We really enjoyed the salt-baked Trout ($40), deboned tableside and served with a tangy tomatillo verde sauce that added freshness and a pop of acidity, as well as the Argentinian style grilled Lamb ($45 for 350g), which was moist, not at all gamey and perfect when slathered with fennel and cumin kissed sumac yoghurt dressing. If lamb’s really not your thing, the Ribeye ($42) is a foolproof option that comes topped with mustard seeds.

Pair your food with a tipple or two from the bar — you won’t want to miss a drink when Ricky Paiva is at the helm. We say, skip the familiar classics and go on a cocktail adventure instead with the Roasted Banana Old Fashioned ($18), which blends Roasted Banana Appleton rum, Bulleit Bourbon, hickory-smoked maple syrup (!!) and Jamaican bitters. It’s every bit as delicious and exciting as it sounds.
