Spago: My Delicious Affair

How much must you love a place to post 21 reviews about it in a year? We couldn't help but notice Burppler Veronica Phua's extreme, enthusiastic obsession with Spago by Wolfgang Puck, and got her to fill us in on the story!

How It All Began
In my previous life as the owner and creative director of a boutique ad agency, one of my client’s projects required me to produce a video for Marina Bay Sands. I had to choose a restaurant to feature, and based solely on a few images I found online, I settled on Spago’s stunning space with floor-to-ceiling windows overlooking the city skyline and the sea from the 57th floor. The shoot went swimmingly. Executive Chef Joshua Brown and Chef de Cuisine Greg Bess were naturals in front of the camera and kept us plied with food. I knew I had to return for a proper meal here and did just that a few weeks later.

That first experience had me so awestruck I’ve since returned for countless meals to celebrate special occasions like birthdays, or simply to indulge with fellow foodies.

The Food You MUST Try
I often recommend the daily Express Prix Fixe Menu ($45). It’s such amazing value that people are always gobsmacked when I describe it to them, and those who end up going always thank me afterwards, effusive with praise. Served in full-sized portions (no downsizing, thank you very much), the options offer a wide variety to please everyone.
I can never pass up on the Big Eye Tuna Tartare Cone ($36), an appetiser that first graced the menu at
Spago’s first restaurant in Beverly Hills, CA, when it opened in 1982. Some days, I’d go for one of their exclusive-to-Singapore creations, like the Laksa Spring Rolls (part of the $45 Express Prix Fixe Menu). Chef Bess seems to have a knack for coming up with inspired takes on our local cuisine.

And just like how dramatically different the restaurant looks and feels from day to night, so do the meals. The a la carte dinner menu is filled with exciting choices — the Pan Roasted Red Snapper Laksa ($54) and Angry Maine Lobster ($115) are my favourites. But the go-to for me now is the Tasting Menu ($155), which chef Bess puts together with the best produce of the season. I do think a meal here is money very well spent, especially when you take the five-star service at Spago into consideration. The front-of-house team always manages to strike the perfect balance between formal and warm, making every guest — myself a returning one — feel welcome.

I’d Highly Recommend This Place For
Great food and wonderful ambience. Whether it is for a romantic dinner, a gathering of family, friends or colleagues to celebrate an occasion, or even to impress visitors from out-of-town, I always feel good about pointing them here.

Veronica’s love for Spago is inspiring, and we’ve watched her share it with countless friends, family and fellow Burpplers. True enough, Burpplers like Jason Wong, Casey Tan and Kenneth Lee had nothing but praise for the experience.
