It does seem that the folks at Food Republic has been going through quite the change for their various locations in recent times — the Suntec City outlet has seen a bit of a revamp and now features a number of new stalls as part of the list of tenants operating a stall there. One of the newest additions to the refreshed Suntec City Food Republic food court would be First Street Fried Prawn Noodles 第一街炒虾面 — this concept is first introduced at the Today Restaurant 日日茶室 along Upper Serangoon Road that is also run by the BreadTalk group; the brand being one that is affiliated to the same folks behind First Street Teochew Fish Soup 第一街潮州鱼汤 as well. First Street Fried Prawn Noodles not only serves up their signature Fried Prawn Noodles at Suntec City, but also serves up Seafood Char Kway Teow that is exclusively available at the Suntec City outlet as well.

We were previously rather impressed with our experience with the same dish when we had visited First Street Fried Prawn Noodles at Kovan and found our experience with their Fried Prawn Noodles at Suntec City to be rather similar. Whilst wok-hei isn’t its hallmark when we have had the Fried Prawn Noodles at the Suntec City location, we liked everything else about the Fried Prawn Noodles — the noodles here are done not too wet nor too dry, while the stock still comes in a slightly gloopy consistency which we prefer. The stock does come with a umami note from the prawns that went into the cooking process; gives the entire dish especially the noodles a good flavour whilst the zippy and savoury chili further enhances the flavour with a spicy kick. The yellow noodles do come with a good consistency without being too soft nor too hard; the mix of yellow noodles and thick Bee Hoon also gave a variance of textures. Whilst lacking sotong, the prawns included here are fresh with a good bounce and came with a natural hint of sweetness, while the pork belly slices does come tender and easy to chew; the crispy pork lard was also a crowd pleaser considering how crispy they were without feeling that it was being soaked in grease.
