The fresh chicken has a delightful bouncy springy chew, the chicken meat being clean-tasting and sweet, the slippery skin being savoury salty herbal in flavour.

The rice is pretty normal, fluffy and soft, but the gravy lends an addictive grainy salty herbal savoury flavour. Also appreciate the crunchy fresh kai-lan / Chinese broccoli with its vegetal bitter sweet notes.

Let down by fatty ox’s declining standards, I decided to try the stall next to his because I recalled seeing queues forming and they must be something that I have been missing out .

The 2 patrons queueing in front of me opted for this mystery thick vermicelli soup noodles. I really couldn’t make out what it was but the sight of the mountainful of seasoned preserved vegetables added to the vermicelli really intrigued me. What was less attractive for me was the pigs trotters which I saw came with the full works of the skin and the gelatinous parts - I know it’s a delicacy to most and high in collagen but still ....

The lady Patron urged me to try saying that young people these days must learn to take some fat meat 🍖 ... and the stall owner chuckled and followed through with saying that I can never find this bowl of combination anywhere else. The adventurous part of me took over and I decided to try and I Glad I did .

I told the Uncle to give me only the lean parts of the trotters and he carefully gleened from his pot of braised trotters.

The serving process was interesting to watch as I saw the Uncle prepare the food with much passion. He first cooked the vermicelli , then topped it with the heaping preserved vegetables then picked out the “ choice lean trotters “ for me and then topped it with his homemade soup stock .

The strips of tender braised pigs trotters, crunchy preserved vegetables , slippery vermicelli all came together so well with the beautiful soup broth. It was surprisingly non greasy at all but instead very light on the palate.
Accompanied with a homemade vinegarish type of chilli , this bowl of noodles was so comforting.

I was told that the beef brisket noodles here are also very good and of course the chicken rice here which is cooked using kampung chicken .

I will be back to try 😊
