Hidden within the second level of Citygate, Fuwafuwa is a new F&B establishment which had opened its doors recently, focusing on serving up Kakigori (i.e. Japanese shaved ice) alongside a small variety of mains and beverages.

Fuwafuwa does serve quite a variety of daily specials for the selection of flavours available for their Kakigori; that being said, we found ourselves going for the Uji Kintoki — a flavour that features a 1st flush Kyoto Uji Matcha soured from Japan alongside Hokkaido Tokachi Azuki. The shaved ice here is being done over a manual machine which requires it to be hand-turned — a rather laborious process especially given how Fuwafuwa is a one-man show during the day of our visit. The end result does however show here with the ice being reasonably fluffy and light — there is certainly a difference when comparing this side by side with the local Ice Kachang and the Korean Bingsu; not as coarse as the former, but definitely still retaining some structure as compared to the latter. The Matcha infusion comes pretty light tasting here, though the bitter notes of the tea are clearly evident — just not too overpowering, while the dollop of cream over the top adds a light, fluffy texture and provides a slight sweetness and gives the dessert slightly more volume in terms of flavour. Hidden within the Kakigori is the Hokkaido Tokachi Azuki which carries a deep smoky earthiness that gives the shaved ice a slight contrast of flavours — liked how they even serve up an additional serving of the same in an espresso cup for patrons to add to the Kakigori or have on the side as well; a thoughtful touch.

Having this does make us recall of those days where Kakigori was nearly a trendy item a couple of years ago with the likes of Kori King and Babao Dessert serving various flavours of Kakigori around; my heart still pretty much lies with Matchaya’s rendition which they no longer serve — there is definitely a difference between that and the other renditions considering the use of Japanese Spring Water at Matchaya. That being said, Fuwafuwa’s iteration of the Kakigori is probably sufficient to sort those cravings out; a rare find now indeed.
