Fried oyster omelette with large plump oysters. The omelette had a good amount of eggs and starch. The oysters were creamy, cooked separately from the omelette and a good match with the chilli’s sour tang 》$6

A generous serving of gooey and soggy mess with a distinctive smokey flavour. The noodles are fully infused with stock and fried with wok-hei from the use of charcoal fire. The texture of the noodles is moist but not overly wet with pork belly slices, prawns and sotong then topped with crispy lard. Squeeze some lime over the noodles, mix it with the homemade sambal and its good to go 》$6

The more frequented of the stalls carrying on the legacy of hawker brothers Alex See and See Hock Siong, this is run by Alex's younger daughter Penny See and husband Qin Sheng, with mum Grace supporting.

Compared to her elder sister's stall, there are slight variations. Their rendition is rather balanced, leaning towards 'wet'. Continually stir-fried over a roaring charcoal fire for up to 30 minutes, the yellow egg noodles and rice vermicelli are tossed with egg, pork lard, and a pork and prawn stock broth gradually infused.

This results in a soft gooey texture, with robust smoky grainy savoury salty sweet eggy flavour.

There's crunchy deshelled prawns and bouncy squid, bursting with sweet savoury flavour. An edge over her sister's version is the addition of fresh crisp spring onions, lending vegetal herbal sweet flavour.

A drizzle of lime juice lends bright tangy zesty sour flavour, while a house secret-recipe sambal belachan lends a punchy but not overwhelming savoury salty spicy flavour.

Solid hokkien mee. Was hoping for a bigger portion but it’s okayyy… at least there were a lot of prawns. Not too wet just nice. The noodles were quite plump and there’s that slight wok hei.

Their rendition is delicious, with equal bits of potato starch and egg, crisp chewy fluffy in texture with lovely smoky eggy savoury sweet flavour.

The oysters are medium and juicy, lending a briny salty sweet note, while crisp parsley bursts with vegetal herbal sweet flavour.

It would have been better with a stronger wok hei and crispier pork lard bits. Don’t waste your time and calories on the oyster omelette as it tastes like carrot cake with oysters. From now onwards, I would think twice before coming back as there are better ones out there.

I would also like to highlight that as I was taking a video of the frying process, from a distance away from the stall, I was given the death stare and eventually a scolding from the staff on my actions. My thinking is if you are so against people taking photos or videos, then why do you still do a clear glass at the front of your stall and everyone can see you frying? Why don’t just change the frying to the back and no one will be able to video or photograph you? Comment down below if you have similar bad experiences.
