3rd-generation hawker Ang Poh Huat serves a rendition that carries good wok hei / breath of the wok, fragrant and smoky.

The regular version, pictured, has fluffy egg and chewy potato starch, with a good ratio of crisp to soft, carrying smoky eggy sweet savoury flavour. Crisp spring onions and parsley lend vegetal herbal sweet notes.

The oysters are small, plump, fresh, bursting with briny salty sweet flavour.

He also serves a unique no-starch oyster omelette rendition that features garlic chili served gravy style, blanketing the dish in piquant goodness.

Now this is a really good place to satisfy your oyster omelette cravings.

The fried oyster ($4/6/8/10) is for people that love their omelette on a drier side. The omelette is extremely fragrant and not too dry, but you still get your crispy bits fix. Paired with their juicy oysters, you're definitely in for a treat.

The oyster omelette ($6/8/10/12) is a starchier and wetter version of the omelette, and it comes drenched with generous amount of seafood chilli sauce. This is my personal favourite, due to the heavier seafood taste and its uniqueness in its hearty flavour. This style is a rare find in Singapore!

Their carrot cake ($3/4/5) is also worth a mention as the carrot cake has the smoky flavour incorporated in it. Totally love how the black version has caramelised bits!

This stall is a must try if you are in Circuit Road Food Centre!!! 😍


Any fellow fans of fried oyster, or orh luak? 🙋🏻‍♀️ Opened only from 5.30pm - 10.30pm and closed on Wednesdays, one can expect plump and juicy oysters from Ghim Guan Fried Oyster. Fresh and burst instantly once bitten, the oysters are better enjoyed when dipped with the chili sauce, especially to tone down the brininess. There’s a good ratio of starchy to crispy egg portions, and fresh sprinkled spring onions. Order the chili version to see if you are sensitive to a special ingredient inside!

Fun fact: did you know that the Circuit Road hawker centre used to be a bus interchange, hence lining a long stretch of this one-way and almost oval road? ("Orhhhhhh".) This place has been in the limelight recently for the ieatishootipost muah chee (sold out but had a nice chat with the uncle, story for another day).

Living just 5 min walking distance away, I often get asked, "What's good to eat here?" Two problems surface: one, I spend much less time around home now as compared to Tg Pagar where I work. Two, I've lived in this area all my life, so my food preference for this hawker centre is kinda skewed.

My usual answer is that it's known for vegetarian food and "orh luak", or fried oyster - the kind fried with starch. Two stalls are in close proximity - Teo Kee, the more famous and popular one, and this from Ghim Guan which is nearer to the bus stop.

$4 is a 'healthy' portion for one person, and it could be that I was the last customer, but there were many plump and fresh jumbo oysters - don't you just love it when they pop in your mouth and the pungent juice lubricates the tongue? The signs of a good orh luak are also the crispy fried bits and the starchy morsels. However the egg portion was a little bland - this is where Teo Kee overtakes the competition.

Do order the spicy version. I told the uncle that I enjoyed the chilli flavour (in the dish, not the dipping sauce). He said the recipe originated from his grandfather and it's never been changed. When I pointed out the hae bi hiam flavour, he smiled and gleefully admitted adding that in but not too much. (Yes, score!)

We all have soft spots for the older hawkers that have kept their recipes true to themselves despite the thirst for diverse flavours and new trends. They may not be the absolute best around - then again, we don't need to have the best all the time. Simple, unchanged tastes that gives us small bouts of happiness sometimes matter more. #BurppleAfterDark

Could be the son? Or a distant relative? Nonetheless, the orh luak tasted pretty decent but not like before where the eggs were fried pretty crispy! Will be back once more!
