Had a very high expectation on this, especially after knowing that Ginjo pork is well-known for its high standards. I find the pork was a tad chewy for my likingโ€” we felt really full halfway from chewing the thick meat. Batter could be improved as well as the current one lacks flavour and the bottom layer of the โ€œcrustโ€ disintegrates quickly upon serving, probably because of the juice/oil dripping through the pork. Side dishes are alright but not particularly memorable.

The ginjo pork katsu might be their signature but I actually enjoyed this ๐—ต๐—ผ๐˜ ๐—ฝ๐—ผ๐˜ ๐—น๐—ผ๐—ถ๐—ป ๐—ธ๐—ฎ๐˜๐˜€๐˜‚ ($28) more โ€” a case of marrying simple ingredients to great effect.

The dashi introduced a strong savoury-umami zing to complement the sweeter porky flavours of the katsu, whilst the luxuriously rich and fluffy eggs sparked some enjoyable textural interplay with the crunchy chunks of pork.

The magic was in the absorbant crumb layer which soaked up the flavours, whilst still retaining a nice crunch and avoiding a sogginess that plagues some others' renditions of this dish. Not to mention the sauce was all-too-perfect as a companion for the rice.

The key was in achieving the perfect ratio of crust and meat โ€” breaking through that crust, your teeth would be warmly welcomed by springy but tender flesh that's accentuated by a gentle fattiness.

It got a tad dry around the leaner edges, but overall a solid texture which allowed the juiciness and robust porcine flavours to shine. A quick swig in their tonkatsu sauce helped to add some vibrant piquancy which made it even more enjoyable by cutting through the heaviness.

This hot pot loin katsu has pork loin cooked in savory dashi broth with egg. As with its other sets, this came with miso/pork belly soup, as well as refillable salad and white/brown rice. Though the egg mixture was a touch salty, it was good with its well cooked rice. Cutlet here had a thinner cut compared to the other Ginjio Pork Katsu (Fatty Loin) Set ($38) we had, and we liked the ratio and texture here better. Slices of onions in there were soft and sweet.

At Ginza Anzu, youโ€™ll find a whole range of katsu options - from the classic pork and chicken, to salmon and seafood! Sets come with pickled veg, miso/pork belly soup + refillable white/brown rice and cabbage salad. If you prefer something less fatty, they offer the Pork Fillet Set ($32) too.

Tried this and the Hot Pot Loin Katsu Set ($28), and we preferred the latter as the cutlet had better texture. This fatty loin was generously thick, but less consistent in its texture throughout and a bit tough. Actually thought itโ€™d prefer it with a thinner cut! It was a little oily but the salad helped in balancing it out. Rice was cooked well.
