We were asked to take our temperature before guided to our table. Under the new Alfresco dining experience, featuring the Alfresco dining menu range from local dishes to international fare.

We were extremely lucky to try the last portion of Grissini Josper Grill Octopus. The Grissini Josper Grill Octopus are first char-grilled in the Josper grill oven. It is then plated with Mediterranean octopus tentacle, potatoes, kalamata, heirloom tomatoes and finally drizzled with pinzimonio sauce. The char-grilled octopus imparts a nice, smoky flavour and tender to bite. Glad that they’re not rubbery at all. The pinzimonio sauce leaves the same clean and refreshed taste in the mouth.

Attended one of my nephews’ wedding dinner last night at the Grand Copthorne Waterfront Hotel and was pleasantly surprised by the quality of their banquet food. Besides the fact that all the courses were really tasty, there were a number of less often seen dishes. Like this pot of very fresh “live” prawns in a light miso-based soup, and a delicious platter of sliced smoked duck in herbal sauce served with fried mantou. I also thought the opening cold dish platter with “sio bak” and roasted duck was a more appetising start than many others I’ve come across.

The 5th edition held at Grand Copthorne Waterfront Hotel was synchronised for a live kanpai cheering session with Tokyo, Japan, to commemorate World Sake Day.
.
A showcase of several brands of sake, shochu, vodka, and other liqueurs were on display. Unlike beer or wine pairing, a pairing of sake or shochu is not meant to be consumed together... you're supposed to finish the food first, then down the shot of sake or shochu. A once-off style of pairing.
.
Pairing of Shochu Zenryo-Imo Ikkomon & Peking Duck Wrap was interesting. The clear, sharp notes of the sweet potato shochu contrasted with the savoury salty smoky flavours of the peking roast duck and sweet bean sauce. Works decently without being overpowering.

(Swipe) Paired the Sake Tokugawa Ieyasu Daiginjo & Pizza Margherita. The light, refreshing sake acted almost like a palate cleanser for the stronger tomato and cheese flavours of the pizza.
