Freshly baked daily, I managed to snatch this piece when the shop just opened. They only had winter melon fillings for their traditional wife biscuits, but that's all I wanted anyway. Personally, I don't like flaky pastry layers like those commonly found in tau sar piah, though I still ate Wing Wah's wife biscuit because I thought the filling made up for it.
But this one puts the rest to shame. The flaky crust was a bit doughy and not oily, which made it less jelat. Then as I sank my teeth, half expecting tough biscuit texture, I was pleasantly surprised at how chewy it was. The winter melon paste was not sweet and had no artificial taste (which I found at another popular wife biscuit shop). Too bad they are best when eaten warm, just out of the oven, so I didn't buy some home. Will return for this!
