3.75⭐There's a time limit of 50min now. We ordered ala carte this time round since the set meal does not have the type of meat we wanted. Ordered 200g Harami, 100g Prime Karubi, 200g Chicken Thigh and 2 rice. The Harami is thicker than what we ate last time hence tougher to chew. The rest are as good as previously. The good thing is that there's no service charge and GST is already included in the menu pricing.

Blast it at level 3 heat, it's not enough to char it properly though. Fortunately this gives a bouncy texture as expected for this cut. I think it's abit of a waste having it here cos the firepower isn't enough to give it a crust, which is a true pity because fatty cuts can potentially char very well.

But if you like bouncy texture why not

This is truly superior to the normal karubi. It's pretty tender and becomes kind of like goo honestly in your mouth. Flame it at level 3, hard.

Very, very surprised. The quality of this cut rivals even the A5 Japanese wagyus, which is super unxpected as usually aus wagyus are significantly lacking

Looking at the marbling you could guess that it's gonna be alright, but it turns out to be terribly tender, almost melt in your mouth. This just goes to show the texture(in terms of lack of chewiness) has nothing got to do with marbling, but really it's due to each cattle as well as the cooking technique. I've had A5 that's chewy at medium rare, and not chewy at medium well, whereas this is the opposite.

With this beautiful cut of beef it's important that it is cooked properly. Since it's so thin, just give it a mild treatment at flame level 1 and flip regularly until both sides change colour. It should be really fast, do not aim to sear it AT ALL. I did and I regretted it immensely.

I guess people who weren't blown away by this cut all grilled it "normally" and overcooked it greatly. Unfortunately because this is not high grade wagyu with tons of fat the margin of error is really small and you can't expect to blast it with heat, expecting fats to slowly melt.

Tldr marvelous meat, order if you really know what you're doing otherwise you're just wasting "A5"

PS I'm surprised they actually offer A4. Similarly I don't think people who aren't totally confident(I guess there's both sides of the DK curve though) about their grilling skills should order such meat, unless you're balling

150g goes for 18.9nett or sth? W 50g each of skirt(harami), tongue and kalbi

This 250g instead of everything being 80g it's actl 150g kalbi, 50g each of the rest, so it's really nice cos who doesn't like kalbi

Their kalbi is pretty decent tho I couldn't cook it as nicely as yakiniku like, not sure if it's cos of the beef or the heat level.

Their beef tongue isn't good though, no matter what I did I couldn't get a soft springy texture on it, it's always too tough

Harami is really difficult to cook, I haven't nailed down the technique. Since it's so lean it's easy to overcook, yet the meat is cut thickly so it's risky undercooking it. I nailed the texture only once out of 5, where it's very tender and not chewy yet full of the characteristic flavour of these interior cuts closer to the organs. I suggest going to the mildest flame and waiting for the surface to just changing colour completely.

I wouldn't recommend this set unless you really know what you're doing. In fact due to the beef tongue(not sure if this is the standard quality) I would suggest going for maybe just the kalbi and harami if they have such an option

The prices here are nett! That's really incredible given the quality of meat they're dishing out and at a reasonable price alr

This pork is known for being clean-tasting. It certainly lives up to that, it doesn't have much smell at all in a good way.

Go up to heat level 3 for this one to fully render the fat from the start, it hardly overcooks so blast it till it's crispy. Drain the rendered fat by tipping it slightly before taking it out of the grill
