Revisited Yuan Fried Hokkien Mee at Ghim Moh Food Centre after 3 years and I was surprised to find that the quality has improved a lot! Right off the bat, the wok hei was super intense and evenly distributed towards the dish. The prawn stock used to cook the noodles was also very rich and packed with umami. The prawns were also pretty big for Hokkien Mee prawns. Definitely will be back.

And there's no wonder, their rendition is a sloppy wet mess full of eggy richness, with the fragrance of their chili and fried shallots elevating the dish.

However, wok hei, which I like in my hokkien mee, was scarce but nonetheless it's a very good rendition.

Long queue during the lunch hour on a weekday. But still worth queuing! Can really see the uncle's effort in frying each plate! Love that the mee is moist in thick prawn stock gravy and silky fried eggs charred to perfection.

this hokkien mee is a slightly moist version. the noodles soaked up the flavours really well and it was very enjoyable for me. with a few random pieces of the treasured pork lards, those bites were especially precious and delightful. the sambal was not exactly spicy. i could do with abit more heat so the chilli did not really make an impact on the dish for me.

but the fried shallots did enhanced the dish to a new level. crispy and crunchy, these small bits provided a surprising bite to the otherwise slurpy noodle dish. and i do not even like fried shallots usually. very interesting and well thought finish touch. i would definitely queue for this again.
