Opened by an ex-Les Amis chef, Hokkien Man Hokkien Mee serves a single item in the menu, and there is none other than the fried hokkien mee. The pictured $10 comes with a decent amount of yellow noodle-thick bee hoon combination, squid rings, pork belly slices and fresh prawns (hidden away in the photo). The generous quantity of eggs used gives it a nice eggy aroma, with a slight wok hei charred flavour. Sambal chilli was on the sweeter side but the star of the show has got to be the slurpy noodles.

Possibly the newest contender, having only opened in August 2019 to much acclaim.

Former Les Amis sous chef Xavier Neo and wife Alice Lai brew their stock of garlic-fried prawn heads and pork bones for over 3 hours, utilising a culinary fine-dining technique, resulting in a heady gravy in a 'wet' style.

The noodles, tossed with wispy chicken egg, crisp bean sprouts, and crisp spring onions, soak in some of that delicious gravy, resulting in a smoky grainy savoury salty sweet eggy flavour and a soft smooth texture.

Chunks of bouncy squid and crunchy wild-caught grey prawns lend sweet savoury flavour, while silvers of tender pork belly lend meaty salty savoury flavour. A drizzle of lime juice for added zesty tangy sour notes to complete.

When HMHM first opened to much fanfare and hype, you either had to pre-order or wait in line (and pray) for a plate of their hokkien mee. Covid hit shortly and I guess it was a blessing in disguise as pre-orders were so much easier.

The hype has since died down so you can get a plate fresh within 10 minutes of your order. This was the first time I have actually had their hokkien mee fresh. There is a clear difference as warm soup stock tastes lighter and less starchy. The wok hey remained punchy but they appeared to be less generous with the ingredients.

I always thought that HMHM serves a good plate of hokkien mee. It's not at the level of Hainan or Yi Sheng but I would definitely not mind waiting in line for upto 30 minutes for it!

I totally agree with most of the people that it is wok hey enough and equally balanced in every taste.

Generous ingredients as I ordered the middle size.

Strong wok hey flavour, abundant sauce. Nice! A little expensive starting at $6 for the smallest.

Hokkien Mee with very delicious gravy and fresh ingredients. The prawn and squid are fresh. Chilli is good.
