Many people would know about this stall because of their recognition on Michelin Guideโ€™s Bib Gourmand for a few years.

The stall opens around 10:30am and I would already see a queue in front over the weekend.

The hawker cooks it batches by batches, so the queue is actually moved pretty fast once the he finished cooking it.

His version of fried Hokkien mee here is definitely more on the wet version, which some may find it lack of wok hey taste. But I like it as he cooked the noodle with seafood broth.

You must squeeze the lime and mix all of them with chili for a better flavour.


Prawn Mee. Feature the medium size, the Hokkien mee is wet version. Cooked in seafood broth, quite tasty, the ingredients fresh, wish have more wok hei.

Serving since the 1980s and having attained the Michelin Bib Gourmand award over the last 7 consecutive years, 3rd-generation owner Manfred Lim carries on much like before.
Their rendition tends towards balanced, leaning more to 'wet'. A robust prawn and pork stock infuses the large portion of noodles, gooey soft chewy (almost al-dente) with grainy savoury salty flavour, but has less wok hei / breath of the wok.
Garnished with soft chicken egg, crisp bean sprouts, springy squid, bouncy fish cake, and crunchy deshelled prawns, combining for a vegetal eggy sweet savoury salty flavour. Finished with lime juice for a zesty sour tangy touch.
Expect to queue around 20 minutes.

This famous formerly Michelin Bib Gourmand stall at Tiong Bahru Food Center has a long queue guaranteed. For $5 you get a plate of fried noodles with egg, 5 shrimps, a few strips of pork belly, fish cakes and squid. The chilli paste helps accentuate the flavour of the noodles but the squid steals the show. Chewy and umami, you will wish there is a piece in every spoonful.

Still I prefer fried Hokkien mee with more gravy and in my humble opinion, a few pieces of lard bits would also help.

Celebrating National Day ๐Ÿ‡ธ๐Ÿ‡ฌ with one of my favourite local hawker food. This modest plate of fried Hokkien mee is flavourful and delicious till the last bite! ๐Ÿ˜‹

Hong heng is a famous Fried Hokkien Mee store here at Tiong Bahru. It is almost listed in multiple Michelin guides, and also featured very heavily in articles and YouTube videos.

Surprisingly, this is my first time eating Hong Heng. Despite me waiting for the store to open at 4.30pm, I was not fast enough to be the first 3 customers.

There's a hint of wok hei with the noodles, the prawn and sotong tasted fresh and was cooked just right, with it being soft and easy to chew.

The sambal chilli was not so spicy.

Hong Heng is the first stall u see when u come up the escalator.
