For over 32 years, wife-husband duo Lim Suan Eng and Ong Lim Chong have perfected their wok skills, churning out plate after plate of exquisite, delicious local favourites.

Mr Ong specialises in the Fried Oyster Omelette (while Mdm Lim specialises in Char Kway Teow), frying large plump oysters with potato starch batter, eggs, and pork lard - yet his rendition isn't overly greasy, having more crispy bits than most.

The contrast of crispy fluffy soft juicy creamy textures, and robust smoky savoury sweet briny salty flavour, are outstanding.

Their home made chili is a winner, infused with lime juice and garlic, bursting with sour tangy zesty herbal spicy sweet notes.

This should be one of the best oyster omlettes I've ever had. The texture is crispy and soft and gooey at the same time. And the oysters are not smelly.

Only hope for chilli to be stronger.

Oyster omelette is made by the uncle.

For over 32 years, this elderly wife-husband team of Mdm Lim Suan Eng and Mr Ong Lim Chong have been delighting customers with 2 dishes; their signature oyster omelette and char kway teow.

With her vast experience, Mdm Lim handles the frying of the CKT, doneness can be requested (more wet or dry, more or less char), evident of her skill - I opted for the dry savoury version, which carried robust smoky savoury salty sweet flavour.

Garnished with tender fish cake, crunchy chye sim / chinese flowering cabbage, crisp bean sprouts, wispy egg, chewy lup cheong / dried cured pork sausage, and bouncy blood cockles.

Their home made chili, which contains fresh red chili, garlic, lime juice, and pork lard(!), offers a bright spicy savoury sour kick, shiok.

If you like your oyster omelette crispy, then this is one stall you gotta try. I ordered the small portion ($5.50) which was already pretty substantial! It's filled with crispy bits that were so satisfying, especially with the charred flavour. The oyster were fresh and succulent as well. Totally something I will eat everytime I am in Hougang!
