Soup stock boiled with fish bones for hours, till the broth turns a creamy yellow white shade, laced with black pepper, white pepper, ginger, evaporated milk, and a dash of XO (extra old) brandy. Bright sweet salty savoury spice peppery boozy flavour.

Paired with smooth thick rice vermicelli noodles with grainy sweet flavour, and crisp cabbage with vegetal sweet notes.

The medium chunks of bone-in toman / snakehead fish fillets are flaky and tender, with sweet savoury salty flavour, pulling off the bone with a bite.

Came to eat their fish & beef horfun but found out they don't sell it anymore.

Had to order slice fish bee hoon soup and was told need to top up $1 for XO sauce if I wanted it.

The soup is very salty but fish slices quite fresh. However its not worth the long wait and gruff service. I wont visit this stall again since I cant get the hor fun and since I can get similar fish soup elsewhere.

I ordered their XO fish soup, the soup based was milky with light taste of Chinese wjne, the fish was fresh.
Overall it’s a decent fish soup.

Don’t be fooled by the long queue at this stall! We queued for 45 minutes only to be greeted by a bowl of fish soup that taste somewhat similar to majority of the other stalls out there. At best, it’s only slightly better than what you can get at random stalls. That said, however, the fish slices here are really fresh though. Perhaps one should try the fish head soup since thats what majority of the patrons here got.

Idk why this stall is not as famous compared to other fish soups at Old Airport Road when i researched online, but this is by far the best Fish Soup I have ever tried!!!!
$6 for a generous portion of fish and creamy broth that we simply could not stop drinking. One thing was that the noodles were all the way at the bottom and so we had to clear the fish before we could even reach the noodles!! Perhaps ordering rice may be a better choice ☺️

This was my second time eating this Hua Ji XO fish head beehoon soup ($6). The first time when I ate it at old airport hawker itself, I didn't quite enjoy it because there were sooo many bones in it and v troublesome to eat. When I ordered this time round, I looked at the menu and saw "sliced fish horfan" and was super tempted to try asking the uncle if they have fried sliced fish xo beehoon soup. But because everyone around me was order fishhead fishhead, so I decided to just go with the flow and stick with the usual order. Despite the fried soah soaking in the soup for almost 40mins (was waiting for my salt order...), it didn't turn super soggy. It was also good that the beehoon was packed separately without even asking! This time round eating it at home, it was more enjoyable although we still found it slightly irritated that we had to be super careful of the small bones.
