I have been craving a good bowl of noodles for quite some time and managed to satisfy it at a quiet non-descript stall at Tiong Bahru Market.

Hui Ji is one of those interesting stalls which serves both fishball noodles and yong tau foo. But fret not because it usually comes with the best of both worlds. My $4 bowl of fishball noodles comes with big bouncy fishballs and various yong tau foo ingredients.

The star of the show however was their noodles. They are cooked perfectly al dente and coated with chilli, lard, vinegar and soy sauce. Though I must admit though that it was kinda a miss when I returned two weeks later.

I have never seen a fish ball noodle with sooooo many ingredients! The $4 portion comes with a generous amount of fish balls, fish cakes, fish dumplings, pork slices and yong tau foo-ish fish paste tofu. The fish paste is very fresh and it has a nice bounce without being too hard. However, the alkaline taste of the noodles is too strong for me and I wished the sauce is more vinegary. Having said that, still pretty pleased with the unexpected fish ball noodle - yong tau foo pairing.

There’s handmade fishballs, fishcake, sliced pork and two her giao (fish dumplings).

Savoury Umami broth from yellow beans and dried anchovies
Operated by a old couple with a young lady helping out.
They do offer the usual Fishball noodles too.

Simple fishball noodles but the handmade yong tau foo was really good and I’d recommend the one that’s wrapped in the beancurd skin (roll-looking thing in center of pic)

Noodles were cooked nicely but make sure you get the ZHAP (sauce) onto every spoonful you take because that chili-vinegar mix is so flavorful

If you love loads of yong tau foo for your breakfast or lunch get the $4 one. You’ll get why I had. You can also choose your own. The yong tau foo is fresh and good. I love the chilli sauce which they made themselves adding more dried shrimps making it better. Really yummy.
