Hup Kee’s oyster omelette is eggier than most oyster omelette, and they cook it for slightly longer! This results in a soft, starchy interior which juxtaposes with a satisfying crunchy exterior.

Love the texture - crispy, not too oily, not too starchy - and it’s topped with juicy plump oysters. Yums!

Tried the renowned Oyster omelette from Hup Kee unexpectedly after seeing how the omelette was done from afar! Ordered the medium portion($8) which was great for sharing (3-4pax).
.
Omelette came across being real egg-gy unlike those super starchy ones we often see! Tasted like an egg with a little crisp and mostly soft texture accompanied by the fresh and tender main character (Big huge oysters)!

Finished this portion real quick and will defintely order again another visit! --------------------------

Hup Kee is one of my favourites for Orh Luak. Crispy, eggy and slightly starchy for that good combination of textures. One of those food that one would try to avoid for late meal but just couldn't resist.
As long as it doesn't rain, eating at Newton's is actually quite enjoyable, soaking in the FC vibes with some cool breezes.

This is undoubtedly the best oyster omelette you can get from our hawkers. The 合記蚝煎蚝蛋 at stall number 73 of Newton Hawker Centre just gets more and more popular. Waiting time is a minimum of 30 minutes. After you have wolfed down your 松記 fishball kway teow and ice kachang, your omelette may still not be ready. However, it's still all worth the wait, the patience of its loyal customers, despite the many other stalls selling oyster omelette at Newton, is testiment that Hup Kee's a few notches above the rest. Using fresh and plump oyster is key. It brings out so much of the flavours. I can't think of any other oyster omelette at hawker stalls that even come close. A plate of small order at $6 comes with more than a dozen of oysters. Next generous amount of eggs are used. Many oyster omelette uses too much of the tapioca starch which ends up as a gooey mash especially when the frying is overdone. Hup Kee's oil used its just nice. You can see it from my picture that there is no excess oil on the plate. Last but not least the tangy chili sauce that comes with the omelette is "home modified", what I came to know from the boss after "Olo-ing" about how fantastic is his omelette compared to others.
