"How good can a piece of braised pork belly be that the staff would recommend it to me instead of their famed burgers (which i personally find overrated)?" I thought to myself after placing my order. When I began to slice this palm sized portion of meat, I knew I was in for a treat that night. The layer of skin atop the pork belly was maple brined. It's sweetness infused into each layer of fat below it as well. I forked through the layers of skin, fat, flesh, fat and placed it in my mouth, experiencing it's full melt-in-your-mouth goodness. And eventually arrived at the conclusion that this was probably the best braised pork belly that I've ever had in all my years. Can't wait to head back once martial law is lifted in Bangkok!
A good old favorite. Pulled pork, caramelized apple, smoked maple syrup, poached eggs, and hollandaise. Over indulgence.
