The version here is more 'healthy' than elsewhere, being much less greasy and almost non-oily.

Beautifully presented, the crackling pig skin is firm with a satisfyingly loud crunch, and a delicate salty savoury flavour. We like that there's little fat underneath.

The succulent slices of pork are tender and moist, with a light chew, and nice savoury salty flavour.
.
This has to be paired with the sweet thick fermented bean sauce it's served with, for greater enjoyment.

What sorcery is this!? This is an ingenious creation, with thinly sliced abalone mushrooms coated in condensed milk, curry leaves, and other secret ingredients, then stir-fried.

It tastes... like Twisties. Like curry flavoured twisties, but better.

Slightly crisp in texture, with beautiful notes of savoury spicy salty. My gosh, this is so good.

Despite the simple name, this plate of rice vermicelli noodles has a generous amount of ingredients.

It's stir-fried with eggs, dark soy sauce, spanish mackerel fish slices, pork loin slices, fresh prawns / shrimp, bean sprouts, and garnished with lettuce and a wedge of lime.

The contrasting crunch of lettuce against the tender ingredients, the bold savoury sweet salty flavours, and the smoky aroma of wok hei / breath of the wok, combine to make this delicious.

Slightly crisp in texture, with beautiful notes of savoury spicy salty. My gosh, this is so good. 9/10 if I didn't mention some of it, you'd be hard pressed to guess the ingredients. Highly recommended.
