Not a big portion, there's a little bit of crisp which disappeared quickly, the meat wasn't the best texture and there's a little bit of funk from sake or sth

Weak miso and didn't amplify umami much, skin was crispy but burnt, literally. Cod could have been more fresh too

The butabara (pork belly) from @jinjosg was so good! Super tender, with just the right amount of fat that makes it melt in your mouth. Pairs wonderfully well with the miso sauce that it comes with which was super umami.

There's quite some bite and a little bit of chew. Slightly underseasoned too. Nothing special

Bouncy, slighty chewy pieces of fat. The texture is very similar to pork jowl actually. Different places achieve different textures and this one is quite good. Slightly crispy on the exterior too
