The butabara (pork belly) from @jinjosg was so good! Super tender, with just the right amount of fat that makes it melt in your mouth. Pairs wonderfully well with the miso sauce that it comes with which was super umami.
There's quite some bite and a little bit of chew. Slightly underseasoned too. Nothing special
Bouncy, slighty chewy pieces of fat. The texture is very similar to pork jowl actually. Different places achieve different textures and this one is quite good. Slightly crispy on the exterior too
Also known as sunagimo(the more common name), the gizzard here was well seasoned. The texture was bouncy, quite a lot of bite, but otherwise not v special.
Hate to admit it but a veg dish could truly be one of the best of the night. Tofu itself was impeccable, crisp shards of skin and really wobbly, smooth and almost custard like texture. It has great complexity that's humble and the sesame taste was light.
The duo of miso were delicious too. Way too strong on their own, but perfect w the tofu. Yellow miso was saltier and red miso was sweeter, and if you to follow the staff's advice of mixing both up, the combination is truly something.
