What’s on the table: Original Mazesoba with Char Siew (above) and Taiwan Mazesoba with Char Siew (below). Both U.P. $16.80++ w/o sides

Burpple set includes a small side dish and free-flow hot/iced roasted green tea! Not in photo we have potato salad and chicken karaage as our selected sides. (Note that chicken karaage is only 1 pc) Mazesoba comes with a small bowl of miso soup, which is sufficient given the main highlight being the mazesoba itself! Mixing the soft-boiled egg together with the thick ramen noodles creates a flavourful sauce which is enjoyable even by itself (you may add chilli oil and vinegar to your preference). Do note that the Taiwan Mazesoba is a little spicy due to the minced pork sauce! Char siew slices are very tender although they were served lukewarm.

You may request for a small portion of rice from restaurant staff to mix with the remaining sauce from the mazesoba – would recommend to do this since there’s definitely going to be sauce and ingredients left over! It’s bound to leave your bowl clean after finishing every grain of rice with the yummy sauce. 😉

Tucked in a corner of Square 2, find this cozy eatery serving up mazesoba, a dry ramen dish hailing from Japan's Nagoya Prefecture. The Vegetable Mazesoba ($13.80) includes chewy ramen noodles topped with sliced vegetables and sauteed mushrooms. Don't miss the best-selling Taiwan Mazesoba "Nagoya Style" ($15.30) and Original Mazesoba All Toppings ($19.60). Pro tip: mix your noodles for a minimum of 20 seconds for optimal flavour!

don't think this is anything special - nagoya style tastes like japanese ba chor mee (i prefer the actual bcm to this haha) i think the mazesoba is nicer than the nagoya style but both were too jelat for me (only finished half the bowl!) it may just not be my cup of tea

Thanks to @dphuacs (with the link-up from @engtingting), I received a delivery from @kajikensquare2 for my family lunch. It’s probably been more than a year since I had Mazesoba, so I was looking forward to having the dry-style ramen again.
What’s the most important step to enjoying this dish is a very thorough toss. And I mean VERY THOROUGH. You should aim to spend at least 30 seconds mixing everything up (if you ordered yours with toppings, do move them to a plate first). Investing this half a minute of your day ensures the strands of ramen are evenly coated in the onsen egg, minced meat sauce, spring onion and strips of crisp seaweed. Otherwise, you will find it clumpy and dry in parts.
Pro Tip: You can request for the sauce to be packed separately if you want to pour it in just before mixing which I think is actually the best thing to do. And if you like more heat and acidity in your Mazesoba, don’t be afraid to ask for extra chilli oil and vinegar.
David also sent me something that I had never tried before - the Mazesoba with Cod Roe and Mayonnaise ($15.80). I found myself also enjoying this ramen for its lusciously creamy and very savoury-umami sauce.
As for ramen texture, @kajikensquare2 cooks theirs al dente for a pleasing QQ chew.

Best part of having this at Novena is that it is on burpple beyond!! So you pay about $6 for a bowl 😋 rmb to mix for 20 seconds to get the best flavours!

A classic Mazesoba for those who are not into the minced pork. It comes with bamboo shoot, spring onion and seaweed too. 7% GST & 10% service charge applied. Gotta try this place if you are in
