Kanada-Ya is a Japanese Ramen Restaurant originated from the city of Yukuhashi, Japan that specialises in authentic Tonkutsu Ramen, founded by Mr. Kazuhiro Kanada in year 2009. Its breakthrough recipe developed by Mr. Kanada allowed it to gain great population and expansion to Hong Kong and all the way to the United Kingdom in 2013, and is considered one of the best ramen shops in London to date. Specialising in authentic Tonkotsu ramen, all noodles are made on site with a special machine, imported from Japan, that uses a very specific brand of flour, enriched with the right protein content and alkaline salts to produce a bouncy, firm noodle capable of standing up to the rich broth.

Last eat out for awhile with the SHN (and most dining places including Kanada-Ya are pretty cleared out - hence had a chance to eat their limited edition Truffle Ramen with only 20 portions a day). The basic version with two chashu is $22.90!

Must say their soup is pretty thick and creamy, and I like the noodles hard but felt the truffle scent is light after mixing it in the soup. Kanshoku will still be my go to for fully immersive truffle flavour.

Ps. Used their app and is not a fan that you can only top up in multiples of $10. Saving grace is that we got a birthday rebate of 15%! Do note you'll get a free drink as well (which we only knew after)

It was very average. The truffle taste was too light, the pork can be more tender. Ramen noodles texture is pretty standard.

Overall, I find it expensive at about $16. I would choose a hearty Marutama chicken soup base ramen anytime over this.

Decided to give @kanadaya.sg a second chance after having a bad experience the first time. Had the Gekikara Ramen which has tonkotsu broth and spicy miso. This was very tasty and slightly spicy so I enjoyed this quite a bit πŸ˜‹

Soup is rich
The noodles is firm
The meat Cha siu is great - no porky taste

My first visit was a disappointing one because according to the menu it's supposed to give me the "most authentic Kyushu experience" but the noodles were clumped together and the soup lacked flavour. I ended up adding spicy miso to it.
