Spring is here! & what better way to celebrate with @kohaku.tempura’s Spring Tendon ($18++)!

What sets their Spring Tendon apart from the usuals is that their special items have a tempura batter made with dry Sakura ebi, which gives it a slight hint of pink & a tinge of salt.

Apart from the unique batter, they have seasonal ingredients which includes the tilefish (which they left the skin & scales on!), white asparagus, bamboo shoots, pickled sakura leaf & my favourite, tamagoyaki!

Yes you’ve heard that right! They’ve decided to tempura tamagoyaki & it’s amazing. It’s still sweet & soft on the inside, but salty & crunchy on the outside. So good, you have to try it yourself.

Apart from that, you still get the usual staples of chicken breast, prawn and mushroom tempura! All of these is topped with mentaiko mayo, together with its usual spicy sauces!

Valid only for 3 months, till the end of May, this seasonal favourite can be found at all three Kohaku Tendon outlets!

Brimming with a medley of spring-time produce coated in unique tempura batter made with dry Sakura Ebi.

The main highlight will be the tilefish. Known for its firm texture and sweet flavour, they retained its skin and scales for an extra crunch thought felt it’s too fishy for me. But I love the slight sweet tamagoyaki (rolled omelette) that we wish there was more. Other seasonal ingredients include the white asparagus, bamboo shoots, and pickled sakura leaf.

The highlight for this bowl the tilefish.
The fish is left with its skin and scales on, and coated with batter only on the flesh side, before it goes into the fryer.
It’s crispy and crunchy outside and moist inside.
Beside that I really enjoyed the bamboo shoot and Fu, or Japanese wheat gluten, which is commonly used in Japanese soups, takes on the shape of a sakura leaf.
