The quintuple set ($68) consists of the Lacto-Fermented Pineapple Galette, a homage to the pineapple tarts, and this is made from a flaky galette pastry with demerara sugar, pineapple jam and layered with fermented pineapples that has been grilled and glazed with pineapple juice. The finishing touch is topped with locally sourced cress and a dollop of crème fraiche.

Another key component of the lunar new year is the kumquats, and the patisserie has baked a Kumquat and Sea Buckthorn Danish made with a sourdough base and glazed with vanilla, apricot and topped with mandarin custard and semi-dried confit kumquat slices for that balance of sweet and tarty flavour. A popular snack that many munches on during visitations are hae bee hiams and the Hae Bee Hiam Laminated Donut Roll in this set is filled with a hae bee hiam cream cheese custard, rolled in with parmesan and shrimp floss, topped with crispy fried shrimp. One bite of this and you will keep going back for more.

The final two pastries, the Sweet Potato & Yuzu Brioche Bun and Chrysanthemum & Pear Custard Flan round up the quintuple set. The former is filled with a yuzu jam and brown sugar nutmeg cream while the latter is filled with a chrysanthemum and vanilla infused custard that is then topped with a pear, ginger and mascarpone cream. A decadent treat that pairs well with a cup of afternoon tea.

Although hidden in a very secluded area, this is one bakery I will recommend. They do not have the tables for you to eat on, but at least they have a couple of seats outside to enjoy their bakes. The Pain Au Chocolate ($7) is very well done, with crispy buttery pastry and bold luxurious melty dark chocolate hidden within and on top. This is one messy pastry to eat! We also tried the Almond Croissant ($7) which was stuffed with a good amount of ground almond and very fresh almond pieces on the top! Definitely recommended for nut lovers! Will be back 😍

This kouign amann ($7) is decadent!! The outside is crisp and light, the inside fluffy and moist. The layering is really impressive! Its heavy on the molasses so some might find it a touch sweet but it’s a worthwhile indulgence.

Have tried their KA before but this is the first time having it in-store! Kindly requested them to toast it for us and it was a slightly different experience from our past 2 tries of their KA. This was served crisp and hot, but it was a little hard at the bottom where the sugars had melted and re-hardened. It wasn’t as nice as the previous try, where it was fluffy inside, and there was that nice buttery flavour with a delicate sweetness. A little sad because I really liked their KA but this did not hit the same level of satisfaction.

My favourite has got to be their Sicilian Pistachio Escargot! 💯 A snail-shaped croissant swirled with nutty pistachio custard 🥜 & rose-scented cranberries🌹, finished with chopped pistachios 💚 & dried rose petals, this savoury pastry with both sweet & tangy notes aces it with layering of flavours & textures! 👍🏻

The Kouign Amann may look ordinary but it delivers way more than it promises! 😋 Flaky pastry layered with butter 🧈 & caramelised sugar, with hints of vanilla & molasses, this is so delightful! 💗
